A minimum of 3 full days in the Serengeti gives you a meaningful sample of the park's central region — enough to get a genuine feel for the place, though not enough to properly chase the migration or add much beyond the core experience.
5 to 7 days opens up real flexibility: enough time to add the Ngorongoro Crater, or to specifically position yourself at whichever migration stage is active during your travel dates, rather than just passing through the Serengeti generally.
